Peach Caprese Salad

My sister and her family came to visit us this week. They brought with them the biggest batch of Colorado peaches. My sister made the best caprese salad with them! You’ll have to kind of use your judgement with the measurements as she just kind of threw it together! Here is what she used:


Watermelon (sliced)

Mozzarella balls or mozzarella cubed If no balls


Red onion (optional)



Balsamic vinegar

Olive oil

Micro greens (sunflower sprouts)

Cherry tomatoes


Slice peaches, watermelon, onions, mozzarella, tomatoes and basil. Combine. In a separate bowl, mix balsamic vinegar and olive oil ( 2 Table spoonsish of each). Stir together, and add salt and pepper. Pour the liquid over the other ingredients and stir. Meagan topped with micro greens/ sun flower sprouts.

It was so delicious and an easy way to use up some peaches!
